Aji Verde Chicken Bowls

Ingredients
1 lb chicken breast
1/4 cup olive oil
1/4 cup fresh lime juice
1 jalapeño, seeded and chopped
1/4 cup cilantro, chopped
1/4 cup green onions, chopped
1 clove garlic, minced
1 tsp cumin
1 tsp salt
1/2 tsp black pepper
2 cups cooked rice
1/2 cup parsley, chopped (for garnish)
1/4 cup additional lime wedges (for serving)

In a blender, combine olive oil, lime juice, jalapeño, cilantro, garlic, cumin, salt, and black pepper to create the aji verde marinade.

Cut the chicken into bite-sized pieces and marinate them in the blended aji verde for at least 30 minutes.

Preheat a skillet over medium heat, then add the marinated chicken pieces, cooking them until they are golden brown and cooked through, about 6-8 minutes.
