Cover the dried porcini with 300 ml hot water and soak for 30 minutes. Lift out the mushrooms, chop them for the uszka filling, and strain the soaking liquid through a coffee filter so no grit remains.

2 tablespoons apple cider vinegar, plus more to taste
1 teaspoon sugar, plus more to taste

200 g all-purpose flour
100 ml warm water
1 tablespoon neutral oil
1 small onion, finely chopped
1 tablespoon butter or neutral oil
1 tablespoon fine breadcrumbs
