Instructions

Read through once, then cook at your own pace with the illustrated guide above.

  1. 1

Trim the thick ribs from the sour cabbage leaves and cut very large leaves in half. Rinse briefly only if the cabbage is aggressively salty.

  2. 2

Soften the onion in the oil or lard, then cool. Mix it with the pork, rinsed rice, thyme, dill, pepper and only enough salt for the cabbage's salinity.

  3. 3

Place 1 heaped tablespoon filling near the base of each leaf, roll tightly and tuck in the ends to make 20-24 small rolls. Do not overfill because the rice expands.

  4. 4

Line a heavy pot with half the shredded sour cabbage. Add the smoked pork, then arrange the sarmale snugly in layers with the bay leaves; cover with the remaining cabbage.

  5. 5

Whisk the tomato paste into the water or stock and pour it around the rolls until almost covered. Weight with a heatproof plate and cover.

  6. 6

Simmer extremely gently for 2 1/2-3 hours, adding hot water only as needed, until the cabbage is tender and the pork and rice are cooked through.

  7. 7

Rest 20 minutes. Serve several intact rolls with some shredded cabbage, a slice of mămăligă and sour cream; do not drown the plate in tomato sauce.

Storage Tips

  • Keep any leftover sarmale in the fridge in an airtight container for up to 3 days.
  • To freeze, place cooled sarmale in a freezer-safe container, layering with parchment paper between each layer.

Substitutions

  • Replace ground pork with ground beef for a different flavor.
  • Use brown rice instead of white rice for a healthier option.

What to Serve With

  • Crusty bread to soak up the tomato juice.
  • A side of sour cream for added creaminess.
  • Pickled vegetables for a complementary crunch.

Common Mistakes

  • Using dry cabbage leaves instead of sour ones, which can lead to a less flavorful dish.
  • Overpacking the filling, making it hard to roll the cabbage leaves tightly.
